Easy Mashed Potato and Roasted Vegetable Enchiladas

Monkey said, "give this a 10", too bad our scale is only 1-5.

She loved it.

Filled with mashed potatoes that literally "ate" the enchilada sauce, and wrapped in a crepe, tonight's dinner is going down on her favorite list.

Of course, because I was starving from two days of crackers, soda and "lemoncello", (wink, wink) the basic recipe they offer here, just wasn't exactly what I wanted, so I tweaked it, just a little.



We omitted the broccoli, (gassy food to begin with, and something to be avoided after a sick tummy), forget about mushrooms, Papa wont eat fungus. We added yellow squash, changed the corn tortilla to a crepe. And I am not a huge fan of red sauce, so we opted to make this Verde.

Then we topped it with sour cream, salsa, tomatoes, and lettuce. wished I had made a side of beans and rice.

I need to find an amazingly good, simple corn tortilla recipe. Store brand always breaks and is way too dry.

This would have rocked the corn.

I don't think any of the Hardie's eat fungus. I'll have to try this and I think the crepes sound better than corn tortillas.

actually nata does!!! She is the only one who will order them on her pizza.
